To Go Gluten-Free Or Not

As I pulled out my coupon drawer in the kitchen to check out their expiration dates, I noticed that 95% of them are for Gluten Free products. The realization instantly sparked my curiosity and I have been reading up on the subject which I found quite interesting as it seems to be the word on the street.

Wikipedia defines Gluten as a protein composite found in foods processed from wheat and related grain species, including barley and rye. Gluten gives elasticity to dough, helping it rise and keep its shape and often gives the final product a chewy texture. Because gluten is hard to digest it can cause serious health issues to individuals with gluten sensitivity (such as weight loss, joint aches, abdominal pain, bloating, heartburn, anxiety, headache, skin rashes, fatigue) and can also create a much more serious condition known as Celiac Disease.

As most people asked, what’s the deal with Gluten-Free? A Gluten-Free diet is pretty much one that excludes food containing the protein Gluten and it is the only medically accepted treatment for Celiac Disease.
According to Penn State Milton S. Hershey Medical Center, Celiac Disease is a condition that creates inflammation and damages the lining of the small intestine. This prevents absorbing components of food that are important for staying healthy. The damage is due to a reaction to eating gluten, which is found in wheat, barley, rye, and possibly oats. The exact cause of the disease is unknown.

According to Dr. Arthur Agatston, Living gluten-free can make you fat (read the full article here). He explains that some people who go off gluten to lose weight end up gaining weight instead. That’s because they consume gluten-free packaged products that are often just as high in saturated fat, sugar and sodium as other junk food, and these products often contain high-glycemic refined ingredients like white rice flour or fillers like potato starch that can affect your blood sugar and trigger cravings.

Also, according to Jillian Michaels, Gluten-free foods aren’t better for your health. She stated, don’t be fooled — gluten-free doesn’t automatically mean “low calorie” or “healthy.” In fact, gluten-free foods are not only more expensive, but full of extra calories and sugars to make up for taste and texture when alternative products are swapped. They also tend to have less fiber than their gluten-containing counterparts. Unless people are careful, a gluten-free diet can lack essential nutrients since a lot of the gluten-free products tend to be low in B vitamins, calcium, iron, zinc, and magnesium. Another rule of thumb, don’t confuse “gluten free” with “low carbohydrate,” some gluten-free pastas are actually higher in carbohydrates than regular pasta.

While we can all agree that Gluten-Free foods might be the only option for Celiac Disease sufferers, they may have little to no benefits to the non sufferers. The key is to always remember that Gluten Free diet doesn’t necessarily mean healthy since some products can be high in calories and carbohydrates. In the end, the key to a healthier self is to eat a healthy, balanced diet and give our body all the nutrients it needs to thrive.

Always Read Food Nutrition Labels to understand and make healthier choices, contributing to an overall healthy diet. Which ever route you take, you should stick with the diet that works for you.

Moments with My Birthday Girl

Where do you take a curious little girl when the weather is not at its best in your area and you want to escape it all? Well, I don’t know about the rest of you, but I took my beautiful Child to Downtown Pomona and surrounding cities for some Vintage and Antique shopping as well as some delicious treats.
Occasionally, my husband and I talk about moving back to Pomona, CA – then we remember there’s a reason we moved out of there in the first place and settled here in the High Desert.

We visited a few shops, including our favorite Pomona Antique Mart.

After Pomona, we drove up to Claremont, CA for some Ice Cream at Baskin Robbins. We last visited this location about thirteen years ago and I loved the atmosphere. We decided to take the kids there to have some treats. From there we drove down to Red Ribbon Bakeshop in West Covina, CA, a place my husband used to frequent with his college buddies when they needed a good meal. I instantly fell in love with the shop once introduced.

I placed a large order of my favorite Chicken Empanada (lightly toasted savory dough generously filled with delectable chicken). I also ordered a Mango Roll (which consists of juicy mango bits and rich butter icing tucked into moist chiffon cake). The Mango Roll has always been my favorite in the shop and it is so delicious.

All in all, we had a blessed day and good moments revisiting some places we love. My Amazing and my Gracious child turned 4 today and I am in awe with my Lord for the gift of Life and Hope.

Touring George Air Force Base

Once a year, my husband and I drive to his work for a Health and Wellness screening test, a program which suggests ways to stay healthy and prevent illnesses. The program also provides discounted rates for weight loss products and services. We toured George Air Force Base before returning home.

George Air Force Base is a former United States Air Force base located in Victorville, California which was decommissioned in 1992 at the end of the Cold War. While most parts of the base remain abandoned, it is now the site of Southern California Logistics Airport. The Base was established by the United States Army Air Corps in June 1941 and was closed at the end of World War II. It was reopened in November 1950 as a training base  and remained a training base throughout the Cold War until being closed in 1993.

The former Air Force Base is surrounded by few Businesses and parts of the Air Force Base are still operational and well maintained, such as the Children’s Playground and Game Courts which are in use on a daily basis by the public as well as a Church (First Christian Church of Victorville). The original 37-foot-wide, 81-foot-long and 32-foot-high Church building formerly located on George Air Force Base was purchased for $5 and moved to its current location by retired Pastor Tom Ratcliff at 9966 I Ave in 1979 .

There is no doubt that George Air Force Base was once a beautiful Military Community for the military personnel and their family members. It had everything from Security Kiosk, Administrative Building, Food Bank, School, Child Care Center (Children’s World), Game Courts (for entertaining and healthy recreational activities), Church, Hospital, Photo Lab, Movie Theater, Community Center, Officers Club, Burger King Restaurant, Phantom Lanes, Hangars, Westwinds Activities Center, Base Exchange, Commissary and so much more. Some of the facilities were demolished a few years ago and some are in the process of being demolished.

Given the pace at which some of these buildings are being demolished, it’s only a matter of time until pretty much everything is gone at George Air Force Base. What you should know prior to visiting the Base is that there are clear signs warning the public to keep out for various reasons and entering some buildings is considered trespassing. I heard there are installed motion sensors in the Hospital and they will go off every time someone enters the building or gets too close. Be very cautious while visiting older buildings and enter at your own risk.

Across from the base, there is the Victorville Federal Correctional Complex.

To My Soul Brother, With Love

I was graced with three Brothers, all of which are special in their own ways. Being the surviving female in the family has strengthened our bond in ways I could never dream of. The first boy, my senior, is one whom I have always looked up to for advice and compassion. My follower is more or less like me. My youngest brother, who just turned thirty (hip hip!), is one with whom I had a special relationship growing up.

Oh boy, was he hardheaded and sweet!
I remember a few fights with my elder brother as a child. With Oliver, we took it to a different level. How could such a sweet little boy be so stubborn? He was strong-willed, had a mind of his own and would not give in for all the gold in the World. In the midst of it all, he had so much love and respect for me and I, loved him so.

He is My Soul Brother who understands my unspoken words.
He is the one who gave both our Mother and me a chance to spend a few more minutes with our Sister before she left this World of mortals; though in my heart I know he was too young to witness the moment.
He is a fighter. I am so proud of his achievements and accomplishments. He could have easily chosen a different path or sought an easier way out; rather, he chose to stand tough and stay the course.

Happy Birthday Baby Brother! May our Heavenly Father grant you many, many more blessed years to share with me. Make this first year of your 30’s count and count me in for even greater support. I Love You tremendously.

High Desert Spring Gardening

Right now in the High Desert it literally feels like Spring. The days are getting warmer and the plants are reacting to the unseasonably warm weather. I noticed a few days ago, some flower buds on the branches of the Sweet Almond Tree in my front yard and I am excited to see the tree all covered in delicate White flowers. The Almond Tree is always the first to blossom after Winter around here; however, the Tree is blooming too early this year compared to the previous years. The weeds too, are coming on strong as they rob my yard of its beauty.

This year, my Sweet William Dwarf (Dianthus) are the first to bloom.

How can you tell if your Garden is ready for Spring?
According to OrganicGardening.com, the best way to tell if a garden has dried out enough to be worked is to pick up about half a cup of earth in your hand. Now squeeze the soil together so that it forms a ball. If the ball of earth can readily be shattered by pressing with your fingers or dropping it from a height of 3 feet or so, it is dry enough to dig. If the ball keeps its shape or breaks only with difficulty into solid sections rather than loose soil, it still contains too much water. Clay soil that is too wet will feel slick when rubbed between thumb and forefinger and working soil that wet can spoil its texture for the whole season.

Since my soil is not quite ready for Spring Gardening yet, I am focusing most of my time and energy on various activities and yard tasks:

  • Planning a Fairy Garden
  • Researching Native Plants
  • Building Bird Houses
  • Cleaning Bird Feeders and Baths
  • Getting my Gardening Tools ready
  • Servicing my Weed Eater
  • Starting seeds indoors
  • Preparing new Sunken Garden Beds for Native Plants
  • Tending to my Perennials (pruning, trimming, cutting back, dividing)
  • Revitalizing my Mint Plants
  • Maybe start a compost pile.

With the weather this warm, it’s definitely time to Start Planning your Spring Garden.
